Planning to Plan!

I bought some small glass storage storage containers at the Dollar Store yesterday. I need to get back on track with my weekly mean prep/planning, and I always feel like things taste so much better stored in glass. Today is Sunday, but, since we don't go back to school until Tuesday, I'll be able to do my meal prep over these next two days. This should give me a bit more time, and won't rush me on this first week back on track.

So, goal for today is to prep as much as possible for this week. I've already planned everything for this first week, and have that on a Google doc. I plan on hard boiling some eggs today for avocado egg salad sandwiches later in the week. I also need to buy a few more lunch containers, and a few more food items at the store today. I have grass fed ground beef thawing in the refrigerator for healthy meatloaf for tonight. I'll need to prep some veggies and fruit for the week. After I do all of this, I really like to set aside a section of my refrigerator for all of my items for the week. This keeps me on track, and makes it less likely one of the other adults in my family will eat the food I need!
